2 cooked Beetroots
3 tbs Ricotta
1 Egg
Salt
Origano
Pepper
Fresh thyme

Caption: Preheat the oven on 200 degrees.
Finally chop beetroots and keep on the side.
In a bowl mix eggs, ricotta, salt, origano, pepper and thyme then add beetroots and mix well.
Place the puff pastry in a mold (or in four small molds) and fill it with the beetroot mix.
Bake the tart on 180 degrees for 30 min then keep it to cool.
Garnish with fresh thyme and fresh ricotta.
