Grilled Banana Pancakes

with Salted Chocolate Sauce

INGREDIENTS {for the grilled bananas} 3 bananas 2 tbsp coconut oil {for the salted chocolate sauce} 80g dark chocolate 1/4 cup agave nectar 1/2 tsp maldon sea salt flakes

INGREDIENTS {for the pancakes} 1 cup gluten free flour with xanthan gum 1/2 tsp baking powder 1/4 tsp baking soda 1/2 cup coconut milk 1 1/2 tsp apple cider vinegar 1/4 tsp vanilla extract 1/3 cup agave nectar 1 1/2 grilled and mashed bananas 1/4 cup warm water

INSTRUCTIONS {for the grilled bananas} Heat a grill pan on stove to high. Peal and slice bananas in half length ways. Add coconut oil to grill pan. Place bananas in pan, cut side down and grill for two minutes on each side. Remove from grill pan and set aside.

INSTRUCTIONS {for the pancakes} Sift dry ingredients together. Mash up one and a half of the grilled bananas with a fork. Add apple cider vinegar to coconut milk and allow to stand for five minutes. Add agave nectar and mashed bananas to try ingredients. Stir coconut milk mixture into batter. Add warm water and continue stirring until completely incorporated. Heat a non stick pan on medium heat. Spoon batter into pan, about one tablespoon per pancake. Wait two minutes and flip rah pancake over. Allow to cook for two more minutes. Remove pancake from pan and place on plate.

INSTRUCTIONS {for the salted chocolate sauce} Melt chocolate, agave nectar and salt together in microwave or double boiler. Pour over pancakes generously and serve with remaining grilled banana.
