Grilled Blackened Mahi Mahi

As the mornings grow cooler, I find myself clutching a bit tighter to these last days of summer.

This dish has grown to be a favorite of mine. Just perfect for grilling season and I imagine can even be baked in the oven as well. Grilled Blackened Mahi Mahi topped with Tomato and Green Bean Scampi.

I've made a homemade Blackened Seasoning Spice rub that adds so much flavor to this dish. Not to mention the veggies that I've chosen to accompany the dish with.
