Make Kim Chi!

Natural fermentation creates probiotics and enzymes that are needed for a healthy microbiome, but most modern diets are lacking in these wonderful foods. Enjoying your own kim chi can help your digestion, immune system and overall health. And it's ridiculously easy and inexpensive to make!

You'll need 2 Napa cabbages, whacked in half and with the stems cut out.

rinse them and then chop into one inch pieces

Put the pieces in 2 large ziplock bags and use your hands to work in 1/4 to 1/2 cup sea salt per bag. Let them sit out for 6 hours, or in the fridge if it's summer--in the sink or in a pan in case the bags leak.

6 hours later....rinse and squeeze over the sink

Chop up 5 green onions, 1/2 a small white onion, a few cloves of garlic, a couple inches of ginger root

Stir it together with a tablespoon soy sauce, a tablespoon maple syrup and 5 tablespoons Korean chili powder, crushed dried Thai chilies and /or chili garlic sauce (or more if you want HOT)

pack the kim chi into small jars and let them wait in a cool place for four days. Then put them in the fridge and enjoy! They'll keep for a month in the fridge.
