Salads are perfect for summer because they're light, fresh, and delicious. We love this pasta salad because it's simple and fresh! Customize with your favorite veggies and the season's best it has to offer from your local farmer's market.

for the salad: 12oz. pasta 2 medium tomatoes 1 medium summer squash 1 medium zucchini 1 medium broccoli crown 1/2 red onion 1/2 red pepper 1/2 bunch of parsley (serves 8)

for the vinaigrette: 1/4 cup vegetable oil 1/4 cup olive oil 1/3 cup red wine vinegar 1 Tbsp Dijon mustard 1 tsp dried oregano 1 tsp minced garlic 3/4 tsp salt black pepper to taste

STEPS 1. Bring large pot to boil and cook pasta 2. Prepare vegetables by washing and cutting into bite sized pieces, onions and peppers thinly sliced, and parsley removed from stems 3. Prepare vinaigrette by whisking together all ingredients 4. Combine cooled pasta, veggies, and vinaigrette; serve immediately or refrigerate to let flavored blend
