Baked Chocolate Pudding
Preheat oven to 180 degrees Celsius Grease a 14 - 16 cm round oven safe dish This recipe serves two people generously or will yield a modest three servings
INGREDIENTS 1/2 cup gluten free flour with xanthan gum 1/8 cup raw cocoa powder 1 1/4 tsp baking powder 1/8 tsp baking soda 30 g dark chocolate melted together with 2 tbsp water 2 tbsp apple sauce 2 tbsp coconut oil 1/4 cup agave nectar 1/4 tsp vanilla extract 3 tbsp hot water 1 tsp lemon juice
Sift flour, cocoa, baking powder and baking soda together.
Add melted chocolate, coconut oil, apple sauce and agave. Mix well.
Add lemon juice to hot water and stir into batter until incorporated
Spoon into greased dish and bake for 20 minutes. Pudding should be baked around the edges. But still moist and gooey in the centre. If baked too long pudding will become chocolate cake.
Serve warm with ice cream or anything that makes you happy
