Berry Sexy Shortcake

All the local berries are super ripe, plump and juicy. The Markets smell so sweet and fruity, so I couldn't resist putting together a simple saucy summer treat that is...healthy(ish). These Berry Sexy Shortcakes are best shared with a friend or two, in the garden with a glass of Proseccoโค๏ธ ps. They are also tasty the next day in bed with your fav coffee and a good book;) #summervibes All shot with my macro lens.

BERRY SEXY SHORTCAKES BERRY MIXTURE 1 cup of each blueberries, raspberries, blackberries and strawberries 1/4 cup of granulated sugar 1 TBSP of each lemon & orange zest 1/4 cup fresh orange juice ZESTY ORANGE SCONES 2 cups all purpose flour 1/2 granulated sugar 3 tsp baking powder 1/2 tsp salt 1/2 cup cold butter 1 egg 2/3 cup milk 1 TBSP orange zest Directions BERRIES: mix all of the berries (4 cups of berries) in a bowl, add sugar, lemon&orange zest, then orange juice, mix and set in fridge to get all syrupy and sweet. SCONES: mix flour, sugar, baking powder, salt, and cut in cold better until crumbly. Next add in egg, milk and orange zest, should be slightly sticky. Then evenly divide into 12 scones on a baking sheet, or make life easy and use a muffin tin, that's what I did;) Bake at 425F (220C) for 15mins until golden brown. Let cool, then slice in half, add a pile of saucy berry mixture and top it with Vanilla Greek yogurt...that is the healthy(ish) part, haha;) But you can top it with whipped cream or vanilla ice cream, the sky is the limit:) I also added almond slices, sooooo good!!

Drop in a cup of super plump blueberries

Be gentle with the delicate sweet raspberries (I don't recommend whipping them in as pictured, ha!)

This is the hard work...slice strawberries (matching nail polish not required, but it does look fab!)

Flick in the blackberries...these are a little tart, which helps balance out the sweetness of the raspberries

Add sliced strawberries, almost ready for the final ingredients

Add 1/4 cup sugar or less, I found it a little sweet, so next time I think I would just add a heaping TBSP

Add the lemon and orange zest, this is important to cut the sweetness and add depth...plus it just elevates the flavour

Squezzzzzze in fresh orange juice...

Cut the butter into flour mixture

Add in orange zest, believe me, this will make them so amazzzzzzing even on their own
