Chocolate Brownies

We met Graeme and Elisma, through a mutual friend, a few years ago. That same friend was kind enough to seat the four of us at the same table at her wedding. That was it! They were officially our couple crush. Also, thanks to them and their beautiful Maine Coon cat, we discovered that my husband, Oliver isn't allergic to this breed and now we also have a Maine Coon cat child. Besides being the most fun people you could happen to be with at a wedding, they also manage to find the time (in between being medical doctors) to be really awesome hosts. Graeme is also quite the baker and because they are incredibly kind hearted and supportive people, allowed me to invade their kitchen with a camera to steal a recipe for inspiration. We are very fortunate to have them as friends. This was Chocolate Brownie Thursday.


{scroll down} 110g gluten free flour 1 cup castor sugar 1/3 cup cocoa 1/4 tsp baking powder 1/4 tsp salt 1/3 cup coconut oil 1 1/2 tbsp vanilla extract 1 flax "egg" {1 tbsp ground flax + 2 1/2 tbsp water} 90 ml warm water

Grease a 22 cm square cake pan very well Preheat oven to 160 degrees Celsius *Recipe adapted from an original by our mutual friend, Jeanette

Sift & mix flour, sugar, cocoa, salt & baking powder together

Add oil, flax, vanilla & water. Mix until combined.

Spoon batter into greased pan. Bake for 20 - 25 minutes. Should be firm but still slightly moist in the centre.

Allow to cool completely. Carefully remove from pan by loosening the edges and flipping over. Slice into squares or rectangles.
