Vegan Shortbread Cookies

little tea biscuits, not too sweet

combine dry things

1 1/4 cup brown rice flour 1 cup unbleached wheat flour 2 tsp baking powder scant 1/4 tsp salt 1-2 tbsp dry sweetener (I like maple sugar)r

mix in wet things

1/4 cup melted Earth Balance 2 egg replacers, mixed separately 2 tsp vanilla 1/3 cup maple syrup 1/4 cup water

Roll out half the dough between wax paper

roll it very thin if you like crisp browned edges

pick up the circles with a thin metal spatula, use the scraps for the next round of rolling

line a cookie sheet with parchment paper

Bake at 350 for 25 minutes, or until edges are golden brown

enjoy with Earl Grey tea!
