Thyme & Caramelised Onion

Loaf Cakes

This recipe yields two mini loaf cakes. You can exactly double the recipe if needed. I used caramelised red onions for this recipe, but you can use any onions you prefer. Grease two mini loaf pans. Preheat oven to 160 degrees Celsius.

INGREDIENTS 110 g gluten free flour with xanthan gum 1 tsp baking powder 1/8 tsp baking soda 1/8 tsp salt 1 flax "egg" {1 tbsp ground flax & 2 1/2 tbsp water} 60 ml olive oil 125 ml warm water 1/2 tbsp lemon juice 1/3 cup caramelised onions* (I used five small red onions) 1 tbsp fresh thyme 1/2 tsp salt flakes *reserve 1 tbsp onions for topping

Sift flour, baking powder and baking soda together

Add olive oil and flax mixture

Combine lemon juice and warm water. Add to batter. Mix with metal spoon until completely combined.

Stir in Thyme, caramelised onions and salt flakes.

Spoon batter into greased pan. Top with extra onions if desired. Bake for 25-30 minutes.
