Ingredients: 700ml bottle of gin Around 20 elderflower heads zest of 1 lemon 4 tbsp sugar
Remove blooms from stems, and add to sterilised bottle or jar. Mix in sugar & lemon zest, then pour over the gin.
Leave to steep for 7 days, swirling the bottle whenever you remember. When the gin turns honey-hued, strain through a clean tea towel & decant into bottles.
Serve with cloudy apple juice & mint, or with classic tonic & ice for early summer sun in a glass.
