Roly Poly Pudding

from my mom's kitchen

My mother is the kindest person I know. It was especially kind of her to let me document her pudding making day, since she's not always that fond of baking and definitely not that fond of being photographed. She loves her kitchen and has always hoped to have a giant communal table where guests and family would gather around, sharing food prep duties and stories. It didn't exactly work out that way as we are a super tiny family and friends have moved frequently. This is part of why it was so special to be able to spend a day with her. Just hanging out and making the pudding that used to be my dad's favourite. It might just have been the two of us, but nowhere feels more like home.

Original recipe is by S.J.A De Villiers from her Cook and Enjoy collection. I've adapted the recipe to be vegan and gluten free. I've also halved the recipe to serve four people. Preheat oven to 180 degrees Celsius

INGREDIENTS {pudding} 1 cup gluten free flour with xanthan gum 1 tbsp baking powder 1/4 cup vegan margarine (cubed) 1/4 cup apple sauce 1 tbsp coconut milk 120 ml apricot jam {sauce} 3/4 cup boiling water 1/2 sugar 1 tbsp vegan margarine

Sift flour and baking powder together in a medium bowl

Rub the margarine into the flour until it resembles crumbs

Add apple sauce and stir with wooden spoon

Add one tablespoon coconut milk

Combine and form dough into a ball

Dust a work surface with some flour. Gently roll dough into an oval shape.

Spread apricot jam over rolled dough

Gently roll the dough into a log shape

Place roll into a suitable oven safe dish. We cut ours in half to fit.

{for the sauce} Melt sugar, margarine and water together

Pour sauce over dough. Bake for 45 minutes.

Serve warm with vegan custard

or with vegan ice cream
