Strawberry Lemonade 8-10 Lemons 2 Tbsp Lemon zest 20 Strawberries 1 cup Blueberries 16 Mint leaves 1 cup Sugar 1 cup Water 5 cups Water Lots of ice (3or4 cups) This is a super simple recipe that will make you look like a star at your next BBQ! You will need a large jug or pitcher that will hold at least 3L (or 12cups) and a small sauce pan. In your sauce pan add 1 cup water with 1 cup of sugar, 8 mint leaves and 2 Tbps lemon zest, bring to boil, then simmer 5 mins to make simple syrup, set aside to cool. Dice strawberries, then muddle (mash, smash, whatever you like to call it). Juice lemons, leaving one thinly sliced for garnish. Combine all ingredients; simple syrup, lemon juice, muddled strawberries, blueberries and remaining mint leaves in a jug, refrigerate for a least an hour to let flavours fuse, then enjoy on it's own or with your fav alcohol!
Boil 1 cup of water, add 1 cup of sugar, 8 mint leaves and 2 Tbsp lemon zest. Reduce heat to med-high until sugar is dissolved, then simmer 5mins.
Chop or dice ripe strawberries, then muddle. I used a potato masher, but also left a few chunky bits...a drink and a meal;)
Thinly slice one whole lemon for garnish. Juice 8 lemons (approx. 2 cups juice). Also finely grate 2Tbsps of lemon zest for the simple syrup. The zest is important to add more intense lemon flavour without adding more lemons.
Remember to set aside a few bits of fruit for garnish, you want it to look pretty...and you can have a bonus fruit salad at the bottom of your glass;)
Pour all ingredients into jug, add ice and decorate. Best enjoyed with a friend, a story and a laugh!
