GREEN GAZPACHO

If it's too hot to turn on the stove go for this no cook green gazpacho with lots of flavour.

Ingredients

3 ripe avocados 2 unwaxed lemons 1 cucumber 2 garlic cloves appr 400-450ml purified water a bunch of parsley 1-2 tbsp balsamic vinegar Salt, pepper to taste 8-10 king prawns ( cooked)

Method: Halve the avocados then scoop the flesh out. Drizzle over with the juice of one lemon. Put into the jar of a food processor then add the roughly diced cucumber, water, finely chopped parsley, mashed garlic, rest of lemon juice, salt and pepper to taste. Mix on medium speed until smooth and silky. Add vinegar then seasoning to taste. Serve cold, garnish with prawns.
