Asparagus stuffed Tomatoes

Ingredients for 4 persons: 8-9 large ripe wine tomatoes, tops sliced off and seeds removed, a bunch of asparagus (500 g), spring onion finely chopped , a clove of garlic, a bunch of fresh thyme, 120 g whole spelt grain ( quick cook ) olive oil extravirgin , salt, pepper.

Heat the oven to 180°C. Brush a baking dish, large enough to hold the tomatoes , with a little olive oil. Arrange the tomatoes in the dish, cut side up, and sprinkle lightly with salt. Place a large frying pan over medium-high heat, and add 4 tablespoons olive oil. Heat until shimmering. Add asparagus and spring onion , finely chopped garlic and fresh thyme leaves. Salt, pepper.

Sautè until the asparagus is just starting to soften, about 5 minutes. Cook whole spelt grain as per indicated on the packaging. Drain and add spelt grain to the asparagus. Mix well and sauté about 5 min. Divide the filling equally among the tomatoes, pressing the filling.Cover with tomato tops, sprinkle with thyme leaves and olive oil and bake for 30 min. or until vegetables are cooked. Serve it immediately.
