Berry Cake

INGREDIENTS 110g gluten free flour with xanthan gum 1 tsp baking powder 1/8 tsp baking soda 1/8 tsp salt 100 ml agave nectar 50 ml coconut oil 60 ml apple sauce 1/2 tsp vanilla extract 60 ml hot water 10 ml lemon juice 1 1/2 cup berries {fresh or frozen}

Preheat oven to 160 degrees Celsius Grease a 20 - 22cm round cake pan

Sift dry ingredients together in a medium sized bowl

Add agave, coconut oil, vanilla and apple sauce

Combine hot water and lemon juice. Add to batter.

Add half the berries to the batter and stir through carefully

Place other half of berries in greased cake pan

Carefully spread batter on top of berries in cake pan

Bake for 35 minutes. Allow to stand for 10 minutes. Then carefully remove from pan. Serve warm with ice cream or as is with dusting of powdered sugar.
