Chocolate Pancakes

PANCAKES {recipe yields 10 small pancakes} 1 cup gluten free flour 2 tbsp cocoa powder 1/4 tsp baking powder 1/8 tsp baking soda 1/8 tsp salt 1/2 tbsp ground flax + 2 tbsp water {combined} 200 ml coconut milk 1 tsp apple cider vinegar 60 ml maple syrup/agave nectar 1/2 tsp vanilla extract SAUCE 50 g dark chocolate 40 ml maple syrup

Combine flax and water. Allow to stand for 5 minutes. Combine coconut milk and vinegar. Allow to stand for 5 minutes.

Sift dry ingredients together in medium bowl

Add flax mixture, coconut milk mixture, vanilla and maple syrup to dry ingredients. Mix well with metal spoon. If mixture is too stiff, add water, one tablespoon at a time (no more that 45ml in total) for more runny consistency.

Heat a non stick pan, on medium heat, on stove top. Spoon tablespoons of batter into pan. Cook for two minutes and flip pancakes with a spatula. Cook for further two minutes and remove from pan once cooked through.

SAUCE

Break chocolate into small pieces. Carefully melt together with maple syrup in microwave oven. Stir until combined. Pour over pancakes as desired.
