ORANGE BLOSSOM PANCAKES
With Vanilla Honey Cream & Berry Compote

FOR THE BERRY COMPOTE
1/2 cup chopped berries 1/2 cup raspberries 1/2 cup blueberries Juice 1 orange 2 tbsp sugar Combine all ingredients above in a pan & bring to boil. Reduce heat & simmer for 10 mins until liquid has reduced by half. Remove from heat & cool.
FOR THE VANILLA HONEY CREAM
1/2 cup mascarpone 1/2 cup crème fraîche 1 tsp vanilla essence 1 tbsp honey Combine the above ingredients & whisk well. Keep aside in the fridge until ready to use.
FOR THE PANCAKES
1 cup plain flour 1 tsp baking powder 4 eggs separated 3/4 cup milk Pinch salt Zest 1 orange 1 tbsp orange blossom essence Sift the flour, baking powder & salt into a large mixing bowl. Add egg yolks, orange zest, orange blossom and whisk to create a wet batter. In a separate bowl, whisk egg whites until stiff & fold into the batter.
