Pork, chive & shiitake

These flavoursome dumplings are the ultimate comfort for me.


1 kg pork mince 1 cup shiitake mushrooms 1/4 chives finely sliced 2 tbsp soy sauce 2 tbsp mince ginger 1 tbsp sesame oil 2 tbsp salt 1 tsp ground pepper 1/2 tsp sugar 1 egg beaten 80 dumpling wrappers Small bowl of water


In a mixing bowl combine the pork mince, shiitake, chives, soy sauce, ginger, garlic, sesame oil, salt, pepper, sugar & egg. Mix well & set aside for half an hr. Place about 1 tbsp of the mixture into the middle of the dumpling wrapper. Dip your finger into bowl of water & trace the edge of the wrapper. Fold in half & pinch together to create a half moon shape. Bring the corners together & pinch.

Line a bamboo steamer with parchment paper. Cut holes in the parchment paper to allow steam to rise up. Place dumplings on parchment paper making sure they do not touch, leaving space for the dumplings to expand. Place steamer over a wok or pan of boiling water on high heat. Steam for 5-7 minutes until cooked.

Serve immediately with soy & chilli dipping sauce. ENJOY!
