cinnamon donuts with orange glaze

These are baked donuts with no yeast, so they have a more cake like texture.

grease a donut pan with coconut oil {recipe yields twelve small donuts} preheat oven to 160 degrees Celsius

DONUTS 110g gluten free flour with xanthan gum 1 tsp baking powder 1/8 tsp baking soda 1/8 tsp salt 1/4 tsp cinnamon 90 ml agave nectar 60 ml coconut oil 60 ml apple sauce 1/2 tsp vanilla extract 60 ml warm water 5 ml lemon juice GLAZE 120 ml coconut cream 50 ml agave nectar juice from half an orange 1 tbsp powdered sugar

GLAZE

Combine coconut cream, agave nectar and orange juice. Mix well.

Add powdered sugar and mix well. Strain mixture once with sieve. Refrigerate for 30 minutes

DONUTS

Sift together flour, baking powder, baking soda and salt

Add ground cinnamon

Add agave, coconut oil, apple sauce and vanilla. Mix well with metal spoon.

Combine lemon juice and water. Add to batter and mix well until completely combined.

Pipe or spoon batter into donut pan. I prefer to use a piping bag for this.

Bake for 15 minutes

Allow to cool on wire rack

Gently dip donuts into glaze

Continue until all donuts have been coated with glaze

Add some orange zest to donuts if desired
