Vegan & Nut Free Basil Pesto

30g fresh basil leaves 30g sunflower seeds 45 - 55ml olive oil 1 peeled garlic clove* pinch of coarse sea salt

recipe yields roughly 100ml pesto *use half clove of garlic if preferred

Crush garlic clove and salt in a pestle and mortar.

Add basil and sunflower seeds. Create a paste.

It might take a while to create a paste with sunflower seeds. Just keep at it. You're looking for a coarse consistency here.

Add olive oil and carry on combining everything in pestle and mortar.
