seed & raisin muffins

INGREDIENTS 1 3/4 cups gluten free flour with xanthan gum 2 tbsps ground flax seed 2 tsps baking powder 1/2 tsp baking soda 1/4 tsp salt 120 ml apple sauce 125 ml maple syrup 100 ml coconut oil 125 ml hot water 1/4 cup mixed seeds 1/3 cup raisins extra seeds for decorating

Grease muffin pan {recipe yields 12 muffins} Preheat oven to 160 degrees Celsius

Sift flour, baking powder, baking soda and salt. Add ground flax seed

Add apple sauce, maple syrup and coconut oil. Mix with metal spoon to combine.

Combine lemon juice and water. Add to batter and mix well until completely combined.

Stir seeds and raisins into batter.

Pour batter into greased pan. Sprinkle extra seeds on top. Bake for 20 minutes.

Allow to cool slightly and enjoy
