chocolate pomegranate cupcakes

INGREDIENTS 1 3/4 cups gluten free flour* 1/3 cup raw cocoa powder 2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 120 ml apple sauce 175 ml agave nectar 100ml coconut oil 10 ml vanilla extract 125 ml unsweetened pomegranate juice** (room temperature) 5ml lemon juice 200ml chocolate ganache 1/3 cup fresh pomegranate seeds

*Add 1/2 tsp xanthan gum if not included in flour mix **I was hoping that the pomegranate flavor in the cake would be more pomegranaty. It's there, but very subtle. Since pomegranate juice is rather expensive, feel free to substitute with warm water and double the lemon juice. Just add more fresh pomegranate to decorate.

Grease a cupcake pan {recipe makes 12 cupcakes} Preheat oven to 160 degrees Celsius

Sift dry ingredients together

Add agave nectar, coconut oil, apple sauce and vanilla extract

Mix with metal spoon until completely combined

Combine lemon juice and pomegranate juice. Add to batter and mix until completely combined.

Pour batter into cupcake pan

Bake for 20 minutes

Remove from pan and allow to cool completely on metal rack

Top with chocolate ganache and fresh pomegranate seeds
