Banana Bread

INGREDIENTS 1 1/2 cup gluten free flour 1 tbsp baking powder 1/2 tsp baking soda 1/4 tsp salt 2 small bananas 1 tsp lemon juice 1/2 cup agave nectar 1/2 cup coconut oil 2 tbsp apple sauce 1 tbsp vanilla extract 1/4 cup hot water 2 tsp lemon juice

Grease preferred pan {makes 8 mini loaves / 1 big loaf / 12 muffins} Preheat oven to 160 degrees Celcius

Sift dry ingredients together

Mash banana and 1 tsp lemon juice together with a fork

Add agave nectar and vanilla extract to banana mixture

Add coconut oil, apple sauce and banana mixture to dry ingredients and mix well with metal spoon

Combine hot water and 2 tsp lemon juice and stir into batter. Mix until well combined

Pour batter into greased pans and bake for twenty minutes

Remove from pan and allow to cool on wire rack

add caramel sauce and fresh banana or just enjoy as is
