Roast chicken is the perfect entrée for almost any meal anytime of the year.
• 1 chicken • 1 stick of butter • Olive Oil • Salt & Pepper • Thyme, Sage & Rosemary • 1 Onion • 2 Cloves of Garlic
Get yourself a nice 3 to 5 pound chicken from a reputable butcher.
Rub the chicken in olive oil. Chop the onions and the garlic. Wash your fresh herbs.
Stuff the chicken with all of it. And don't forget to put a stick of butter under the skin.
Place you chicken in a Dutch oven. Feel free to let it rest upon onions carrots or potatoes. Cover the chicken in salt pepper and fresh herbs to your liking.
Fill the pot with 3 cups of your favorite liquid. You can use water, chicken stock, white wine or even beer!
Heat your oven to 350°. Roast the chicken for one and a half to two hours until the skin is crispy golden brown.
