One year ago I started my food blog "kuisine" and two weeks ago I decided to bake a little naked cake with berries for my blog birthday. I already knew how I would take the photos and how I would arrange the cake but then everything turned out a little bit different: the lovely cake fall down on the floor and was destroyed… I was so sad and angry… But then I decided to decorate the cake anyways and take my photos! And I think it turned out very lovely! What do you think?
Cake 1/2 stick (50 g) butter, melted and cooled 4 eggs 1 cup (225 g) brown sugar 1/2 tsp pure vanilla powder 5 tbsp milk 1 1/2 cups (190 g) all purpose flour 1 1/2 tsp baking powder pinch of salt Mascarpone Cream 1 cup (250 ml) cream 1 cup (250 g) mascarpone 1/3 cup (40 g) powdered sugar Decoration fresh berries powdered sugar
Cake Heat oven to 175°C (350F). Butter and flour three 6 inch (15 cm) cake pans. Melt the butter and let it cool. Whip together the eggs, sugar and vanilla about 5-7 minutes. Add milk and melted butter to the egg mixture. Whisk togehter. Mix together flour, baking powder and salt in a bowl. Add dry mixture to the batter and stir until smooth. Divide the batter between the three prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Then let the cakes cool for 10 minutes in their pans before inverting them onto a cooling rack. Let cakes cool completely. Frosting Whip the cream to foamy cream with the stainless steel beaters. Add powdered sugar and beat until very fluffy. Add mascarpone and whisk together until mascarpone is fully incorporated. Assembly Once all layers have cooled you can start to build a naked cake. If the layers have risen somewhat take a knife, skim the top with a knife, cutting the surface and removing the excess cake. Put the first layer on to a plate or cake stand. Cover the top with mascarpone frosting. Put 2 hand full of berries on the frosting Then put another layer on top and repeat to make your three layers. For the decoration: Let your creative juices flow.Place berries randomly on top of the cake and on the mascarpone frosting. Finally dust with the extra powdered sugar. Serve fresh !
