Ginger & Honey Soy Chicken

This is my twist on this classic dish.
Sundays are for eating. What better meal to have than a home cooked chicken roast. With all the trimmings, of course.
1.5 kg free range chicken 1/2 cup soy sauce 1/4 cup lemon juice 2 tbsp honey 2 tbsp sesame oil 2 tbsp grated ginger 2 tbsp mince garlic 1/2 tsp ground 1/2 tsp pepper
Combine all the ingredients exceptt the chicken in a large bowl to make the marinade. Add the chicken to the marinade in the bowl, cover & marinade for at least 1 hr, preferably overnight. Turn the chicken over in the bowl occasionally.
Preheat the oven to 180C/350F/Gas Mark 4. Place chicken on a rack & roast for 1.5hrs. Use the excess marinade to baste the chicken every 15-30minutes. Allow chicken to rest for 10mins.
Whilst the chicken is cooking, prepare your trimmings. I made a sweet potato & potato mash, & blanched bok choy with a soy sauce & sesame dressing.
When ready, dig in!
