homemade water kefir

dissolve 1/4 cup of organic sugar in a quart of warm water.

add the hydrated water kefir grains to the lukewarm sugar water.

cover with paper towel or coffee filter and secure with a rubber band set in a warm place for 24 to 48 hours

after 24-48 hours strain the water kefir grains from water kefir with a plastic mesh stainer. no metal please

it is ready now. you can refrigerate as is or you can flavour it by adding fruit or juice. cap and set in warm place for 1 or 2 days. check a couple of times a day to release any pressure and to make sure it doesnt get too fizzy.

strain the fruit, refrigerate and enjoy.
