Ricotta Pancakes

Why I love Pancakes

- they are so fluffy, smooth, soft and simple delicious!! - they can hold a variety of different flavours โ€“ from sweet to savoury! - you can add so many different toppings: chocolate, maple sirup, berries, bacon, cheese, apple, cinnamonโ€ฆ - they cook fast! - they transform every meal into a divine meal!

You need

4 eggs 4 tbsp butter milk (or any other milk) 1 cup (250g) ricotta cheese 1 lemon, zest and fresh juice 1 cup (90g) rolled oats 2 tsp baking powder ยฝ tsp vanilla powder 1 pinch of salt


Combine all ingredients in a blender an mix until batter is smooth. Heat some butter in a lage skillet. For each pancake, spoon 2 to 3 tablespoon of batter onto skillet and spread batter into a round. Cook over medium heat until surface of pancakes have bubbles. Flip and cook until browned on the underside. Serve warm, with desired toppings.
