Blueberry & Lemon Crumble

This recipe combines all of my favorite things; -----bright flavors of blueberry and lemon -----fluffy, light batter with a crunchy top -----and a pinch of healthy with Greek Yogurt! It's a super simple & insanely rewarding combo!

Gather

3 cups all purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup vegetable oil 1 1/2 cups sugar 2 eggs 1 cup Greek yogurt 2 tablespoons lemon juice 2 cups blueberries FOR THE CRUMBLE TOPPING 5 tablespoons cold cubed butter 3/4 cup flour 1/2 cup sugar

In a medium bowl, combine flour, baking powder, baking soda and salt.

***PLEASE SCROLL*** In a separate larger bowl, blend the sugar, oil, and eggs until smooth. Add the yogurt and lemon, blend well. Gradually incorporate the flour mixture to the wet ingredients. Blend until just combined. Fold in blueberries

Scoop batter into cupcake pan, fill almost to the top. Combine crumble topping ingredients in a small bowl. Cut the flour, sugar and butter together so the butter is broken into small pieces and well combined. Generously top muffins with crumble mixture.

Bake @ 425 for 3 minutes (this allows the muffins to rise!) Then drop to 350 for 20-25 until muffins are light golden.
