I LOVE chocolate freckles! They're one of those childhood treats that you sort of forget about until you see them in a shop and then you just have to have them. You don't even care that they're overpriced. For Christmas a friend of mine sent over the most amazing plate of Christmas cookies and sprinkled throughout were home-made freckles. Why hadn't I though of making them at home before? They're so simple to make and if you use good quality chocolate they're beyond delicious. Here is a recipe to make your very own Milk Chocolate Freckles:
300g Lindt milk chocolate 200g milk cooking chocolate 175g of 100s and 1000s
Slowly melt the chocolate in a glass bowl over some simmering water. Make sure you don't over heat the chocolate as it will seize. Allow to cool until slightly thickened. Line a baking tray with baking paper. Place tray in fridge until cold (about 5 mins). remove from fridge. Spoon the chocolate into a piping bag. Pipe small "drops" of chocolate a few centimetres apart onto the cold baking tray. Once tray is filled, bang lightly on counter top to allow chocolate to spread a bit. Sprinkle with 100s and 1000s. Return to fridge to set. Enjoy.
