Australia Day is celebrated annually on the 26th January.

It's a day for patriotism. A day for celebrating. A day for eating & drinking. Lamingtons are a quintessential Australian dessert.

Lamingtons are a quintessential Australian dessert. A light sponge cake coated filled with strawberry jam & smothered in chocolate icing & desiccated coconut.

FOR THE SPONGE CAKE

225g plain flour 1 tsp baking powder 115g unsalted butter 150g caster sugar 2 eggs 125ml milk Preheat the oven to 180C/375F/Gas Mark 4 & grease & line a 20cm square tin. Add the flour, baking powder, butter to a bowl & using your fingers to break up the butter. Rub it into the flour until fine crumbs are formed. Add the sugar, eggs, milk to the bowl & beat until smooth. Pour the batter into the tin & bake for 30mins or until cooked. Allow cake to cool in tin before removing & cooling on a wire rack. Trim the top of the cake to create a flat surface. Slice the sponge in half lengthways. Spread a layer of jam on one half of the sponge, place the other half on top & sandwich together. Cut into squares.

FOR THE CHOCOLATE ICING

15g unsalted butter 70ml milk 15g cocoa powder 250g icing sugar 250g dedicated coconut Add butter & milk to saucepan & heat on low heat until butter is melted. Sift the icing sugar & cocoa powder into a bowl & pour over the butter & milk mixture. Whisk until smooth & lump free. It should be a runny consistency.

TO ASSEMBLE

Dip the square sponge cake into the chocolate icing coating all sides. Roll the square sponge cake into the bowl of desiccated coconut until completely covered. Place on wire rack until chocolate hardens.
