IRISH COFFEE & CHOCOLATE

For the Irish coffee panna cotta layer

1/2 cup while milk 1 1/2 cups double cream 2 tbsp granulated sugar 100ml Baileys Irish Cream 1 1/2 tsp gelatin powder 3 tbsp coffee (instant or espresso) For the Chocolate Panna Cotta Layer 1/4 cup whole milk 1/2 cup double cream 1 tbsp granulated sugar 1 pinch salt 1/2 tsp gelatin powder 50g dark chocolate

For the Irish coffee panna cotta layer

Place the milk in a bowl over another bowl of boiled water (not boiling) to warm the milk. Sprinkle the gelatin powder on top and whisk to dissolve the gelatin. In the meantime, place the cream, sugar, Baileys Irish cream, coffee in a saucepan & heat. Ensure the sugar is dissolved but do not boil this mixture. Once heated, take the pan off the heat. Add the milk & gelatin mixture to the saucepan & whisk thoroughly. Pour the mixture into 4 glasses. Chill in the fridge for 1 hr or until set.

For the chocolate panna cotta layer

Place the milk in a bowl over another bowl of boiled water (not boiling) to warm the milk. Sprinkle the gelatin powder on top and whisk to dissolve the gelatin. In the meantime, place the cream, sugar, chocolate, salt in a saucepan & heat. Ensure the sugar is dissolved but do not boil this mixture. Once heated, take the pan off the heat. Add the milk & gelatin mixture to the saucepan & whisk thoroughly. Pour the mixture into the glass over the Irish Coffee layer. Chill in the fridge for another 1/2 hr or until set. Assemble with whipped cream, shavings of chocolate or berries of choice.
