These Swiss cookies, called Braezeli, are made with a particular Braezeli iron. They remind you on waffle, but the Baezeli are thinner.
4 1/4 Cups (1liter) fresh cream 3 eggs 2 pinch of salt 2 tbsp liquor 2 1/2 Cups (500g) sugar 4 3/4 Cups (600g) all purpose flour
Whisk together flour, salt and sugar in a medium bowl, set aside. Mix with an elwctric mixer cream, eggs and liquor. Add flour mixture, and mix until just combined. Add 1 cup at a time, mixing until incorporated after each addition, until dough is just soft and thick. Put the dough in the fridge for 2 hours.
Coat a bratseli or pizzelle iron with some butter, and heat.
Place 1-2 tbsp of dough in the middle of the grid,
and press handle down tightly.
Cook braezeli until golden.
Roll them immediately with a wood stick.
Let cool completely on wire racks.
