tomatillo salsa

make your salsa as hot or mild as you like. choose a variety of mild to hot peppers, tomatoes, peeled onions, peeled tomatillos and garlic cloves (leave the skin on garlic for roasting) drizzle on olive oil. salt and pepper

in a single layer roast at 375 for 15 -20 minutes, or until they start to turn golden brown

chop some cilantro and flat leaf parsley

let them cool. tilt the pan to drain off any extra liquid. add everything except garlic to your food processor. cut the tip of the garlic clove and squeeze the roasted garlic out of the skin.

pulse in your food processor with your cilantro and parsley until well chopped but not blended. refrigerate and enjoy.
