Butternut Squash Quinoa Salad

Ingredients (Serves2)

1 cup dry quinoa 1/2 butternut squash 1 diced tomato 1 Avocado 2 cups baby spinach 1/2 chopped apple 1/4 cup chopped celery Pumpkin seeds Cranberries Goji berries Olives


1. Cook quinoa. 2. Cut squash in small pieces and place them in a bowl. 3. Toss squash pieces with olive oil and salt and bake for about 15 min at 250C. 4. In a serving bowl combine quinoa with the rest of the ingredients. 5. Once is cooked, take out the squash from the oven and let it cool. 6. Add squash to the salad and pour the dressing of your choice on top. 7. Enjoy!!
