red cabbage salad
This salad is a creative combination of healthy ingredients that taste really good together!
1 small red cabbage, thinly sliced 1/2 cup chopped parlsey 2-3 red apples, thinly sliced 12 chopped dates 2 hand full walnuts, chopped
Slice your cabbage as thin as possible, using a food processor or very sharp knife. Add parlsey, red apples, dates and walnuts and mix until evenly combine. Save a little nuts and herbs for topping. Give the dressing into the salad and mix it.
½ pomegranate, seeded 1 tbsp balsamic vinegar bianco 1 tbsp Dijon mustard 1 tbsp honey 4 tbsp olive oil salt and pepper to taste
Remove the seeds from a half pomegranate, use the rest for another purpose (perhaps sprinkling on top of your salad). In a blender or food processor add all of the ingredients for the dressing. Blend until creamy and smooth. If you don’t like the little nuclei you can sift the dressing. The dressing is enough to dress three or four large dinner salads.
