salad with fennel

This healthy and delicious salad is perfect for winter days!


4 oz (100g) baby arugula, washed 1 fennel, halved and thinly sliced 1 orange, peeled and fileted 7-10 cherry tomatoes, cut in quarters 1 hand full walnuts fresh parsley, chopped olive oil vinegar salt pepper

Slice your fennel as thin as possible, using a food processor or very sharp knife. Cut the fileted orange into thin pieces. Mix the baby arugula, fennel, orange and cherry tomatoes in a large bowl. Add the nuts an parsley for topping. Season the salad with olive oil, winegar, salt and grounded pepper.
