RAW COCONUT, DATE AND ALMOND BALLS
(New Years Resolution friendly)
If, like me, New Year always brings about a much needed post Christmas health kick, then these are a wonderful addition to the fridge. Packed with good energy from the almonds and the dates, they have no refined sugar but have a lovely natural sweetness that helps you feel like you aren’t going completely cold turkey from all the delights of the holidays. I learnt this recipe in India, which explains the generous helping of ground cardamom, but you can omit that if it is a flavour you aren’t too fond of. They are perfect to have on the go - before the gym or in a kid's lunchbox!
I N G R E D I E N T S
125g raw coconut chips (plus about 30g more for rolling) 300g stoned dates 150g raw almonds 1 tsp ground ginger 1 tsp ground cinnamon 1 tsp ground cardamom (optional) Pinch of salt
M E T H O D
1) In a large food processor, combine everything until it turns into a sticky dough (this may take up to 5 minutes of blending). I add a dash of water to help everything combine well. 2) In a small food processor, blitz some additional coconut chips to make a powder. Place on a plate or in a bowl. Alternatively you could use desiccated coconut here… 3) Using your hands, roll the mixture into bowls, then cover with the ground coconut. Place in the fridge and leave to chill for half an hour, or until you are ready to eat them!
