Strawberry Almond Cake

Low FODMAP, gluten free, lactose free, fructose friendly



3 cups almond flour 1/2 tsp salt 1 tsp ground cinnamon 3 eggs 1/2 cup caster sugar 1/2 cup natural Greek yoghurt Zest of half an orange ~10 strawberries, sliced longways 0.5cm 1 tsp caster sugar Zest of half an orange

Preheat oven to 170°C & line a 9-inch springform tin. Combine almond flour, salt & cinnamon. Whisk eggs, sugar & zest of half an orange in a separate bowl until thick. Stir in yoghurt, then mix into dry ingredients. Prepare strawberries & place in a clean bowl with sugar & orange zest, & mix gently. Arrange strawberries on bottom of the tin to cover completely. Pour batter on top of strawberries & bake for 40 mins. Cool for at least 20 mins before removing from tin. Carefully turn over on to a plate.

Serve with natural yoghurt & enjoy!
