Sinterklaas or Saint Nicholas in English, is a fun and quite crazy tradition here in the Netherlands. It's celebrated in the evening on Dec. 5th, when Sinterklaas and his helpers (the Zwartepiets) bring presents to all the kids. An important part of the tradition are these "Pepernoten"; delicious cookies that are super easy to make. In fact my kids make these on their own, and so far this year they have made 3 batches and the cookies were all gone within the first days... I'm a bit undecided whether that's a good thing or not;)
250 g self rising flour 135 g brown sugar Pinch of salt 10 g gingerbread spice mix 150 g butter 4 tbsp milk Use food processor with knife. Add the dry ingredients and butter in chunks, process till butter is cut and mixed with the flour. Add milk slowly on high speed and process for a few seconds (until dough looks ready) Kneed by hand and make small balls. Bake at 160 degrees for 15 minutes
Enjoy and Have fun!!
