Banana Bread

With Oat Flakes

Bananas in this pastry have amazing flavor and caramel taste. Try this bread warm with butter and Earl Grey. It's fantastic!

You need the ripest bananas

What you must have

(For baking pan 10x20 cm): 3 very ripe bananas (smashed) 100 g sugar 70 g butter (melted) 1 egg 1 cup all-purpose flour 1/2 cup oat flour 2 tbsp oat flakes 1 tsp baking soda pinch of salt 1/2 tsp ginger powder + 1/2 tsp cinnamon (optional)

What you should do:

Smash the bananas in the large bowl using wood spoon or fork. Add melted butter and stir together. Add egg, sugar, salt, baking soda, spices. Mix it well. Add sifted flour (both types). Mix the dough until smooth. Preheat the oven to 175 degrees. Line the baking pan with butter or place a piece of parchement. Pour the batter gently. Sprinkle with oat flakes. Bake for 1 hour. I recommend to not open your oven until first 30 minutes.

I love to eat the warm slice of banana bread with butter the most. Mmm... it's a perfect start of day, I think!
