apple pie buttermilk biscuits

I like apple pie and I like biscuits and I thought it would be a great idea to combine the two.
For the filling:
2 apples (your choice/peeled and cut into slices) 1 teaspoon of cinnamon 1/8 teaspoon of ground nutmeg 1/4 cup of water 1/4 cup of sugar 1 tablespoon of dark brown sugar
Simmer all ingredients in a small pot for about 30 minutes and set to the side and let cool.
For the biscuits:
1 3/4 cups bread flour 1 cup of buttermilk(ice cold) 3/4 stick of unsalted butter (put in freezer for at least 30 minutes) 1 teaspoon sugar 2 1/2 teaspoons of baking powder Mix butter into dry ingredients until they are little pebbles(I quickly cut mine up into little pieces before adding) and then gradually add milk. Don't over mix. This mixture should form a big ball of dough. If you have excess flour, add a little more milk. Then place dough onto a floured surface and hand press or roll dough out until it is about a 1/2 inch thick and about 10 inches wide( give or take).
Then spoon out just the apples onto one side of your dough.
Fold the other half of the dough over onto that mixture.
Take a sharp knife and cut your biscuits into 8 pieces. Then place your pieces onto a lined baking sheet.
I like to brush a little buttermilk on top of the biscuits along with a few sprinkles of sugar. Then bake at 425 - 450 degrees (depending on your oven) for about 15 -25 minutes or until golden.
