Banana-Date Yogurt Rolls

a tradition, a ritual. A task that's the archetype of comfort and relaxation (if you ask me)
I can't tell you exactly how satisfied I was with these pillowy, crisp rolls.
2 1/2 c bread flour 2 c flour 2 tbsp sesame seeds 2 tbsp butter 1/2 tsp salt 1 1/2 tsp active dry yeast 1/4 c honey 1/2 Greek yogurt 200 ml water
Sift flours and rub butter in. Add in other ingredients, and knead until a dough-like consistency is achieved. Cover with cling wrap and leave to cool in a dry place for an hour. -
Mash 1 banana, 4-5 dates and 1 tsp cinnamon. Knead and roll the dough out into a 30 x 20 inch rectangle before spreading the filling out on it, with a 1 inch border. Roll up and slice into 12 rolls. Leave to rise for 45 mins in the oven before switching on the heat to 190. Bake for half an hour. -
