A buckle is an old fashioned dessert that combines fresh fruit, rich cake batter, and a streusel topping. Blueberry buckle is probably the most common, but I like to make it with plums from an incredibly prolific plum tree in our front yard.

And it is so easy to make!

All you need: Cooking spray 1 1/2 cups all-purpose flour 1 tsp baking powder 1/4 tsp salt 1 cup unsalted butter 1 cup plus 1 tbsp sugar 2 large eggs 6-8 plums, pitted Cinnamon and sugar for sprinkling

First remove the pits from the fruit and cut into slices.

Beat sugar and butter until fluffy, then add eggs.

Put the kids to work!

Mix in dry ingredients.

{The batter will be thick.}

Scoop the batter into a round pan lined with parchment paper. Then poke the plum slices deep into the batter in whatever pattern you'd like. The kids love this part!

Stir together 1 tbsp sugar and 1/2 tsp cinnamon and sprinkle on top.

Bake at 350 degrees for 45 minutes.
