BOURBON CHAI FIZZ
4 cups water 1 cup sugar 3-inch piece of fresh ginger, sliced 1 vanilla bean, sliced down the middle 4 cinnamon sticks 5-8 whole star anise 8 whole green cardamom pods, gently crushed 10 whole cloves 1/4 tsp black peppercorns Dash of nutmeg Optional: Sliced orange peel (not grated) from one orange 10 bags of Darjeeling tea, paper tags removed
Bring all ingredients to a boil except the tea. Reduce the heat and simmer for 20 minutes. Remove from heat, add the tea bags and let steep for 5 minutes. Strain concentrate and let it cool.
