mushroom & smoked ricotta risotto - a recipe -

Tread lightly & look underfoot

e v e r y w h e r e

mushrooms are hidden

if you pull them out at the root they won't grow back

always use a knife to cut the mushrooms at their base

dust off the earth with a brush

washing the mushrooms in water will spoil them

take only as many as you need

wild mushroom & smoked ricotta risotto

400g wild mushrooms 2 tbsps olive oil 1 onion, chopped 300g Arborio rice 200ml white wine 1.4l chicken stock 100g smoked ricotta 20g butter

slice the mushrooms & lightly pan fry; pour the olive oil into a medium saucepan & add the onion, cook until soft; add the rice and stir until coated in oil; pour in the white wine, then slowly add the stock bit by bit, stirring constantly for 25-30mins

when the rice is cooked, add the mushrooms to the pot; stir through; grate in the ricotta & add the butter; stir and serve while piping hot
