CARROT CAKE

& cream cheese icing

Ingredients

1 ¼ cup GF SR flour 2 tsp ground cinnamon 1 tsp ground nutmeg 1/4 tsp salt 2 eggs 2/3 cup olive oil 1/2 tsp vanilla extract 1/4 cup caster sugar 1/4 cup dark muscovado sugar 2 medium carrots, grated 1/3 cup pineapple, crushed 1/2 cup walnuts, chopped 1/4 cup coconut, shredded

Method

Preheat oven to 180°C & grease an 8-inch cake tin. Prepare ingredients, grate carrots (lightly squeeze some juice out) & chop walnuts. Combine flour, spices & salt. In a separate bowl, whisk eggs, olive oil, vanilla & sugars until creamy. Add flour mixture & whisk until smooth. Add walnuts, coconut, pineapple & carrot, stirring after each addition. Mix well then pour into tin. Bake for 30-35 minutes.
