grape, fennel & rosemary focaccia.

Mix 1tsp dried yeast & 1tbsp sugar to 350ml warm water, & add to 450g bread flour with 1tsp each of fennel seeds, rosemary & salt. Knead & prove. Knead in 125g grapes & scatter a few on a baking tray, then stretch over the dough. Prove for 30 mins & bake in 200 degree oven for 30 mins. Drizzle with oil.

falling into a bowl - as you shell them one by one.

C O O K

borlotti beans with garlic, sage & olive oil on crusty bread.

Combine 1.5kg beans with 3 chopped tomatoes, 10 unpeeled cloves of garlic, a bunch of sage and 175ml oil. Cover with cold water & bring to the boil. Partially cover & simmer for 45 mins 'till beans become tender. Top up with water as needed. Serve with chunks of bread & drizzle with oil.

- so sharp & crisp to taste.

E A T

sweet pears with gorgonzola, mascarpone, walnuts & thyme.

Press 150g Gorgonzola through a sieve into a mixing bowl. Add 100g mascarpone and mix together. Serve with sliced pears, walnut chunks & a sprinkling of fresh thyme.

S I M M E R

wild mushroom risotto with smoked, salted ricotta.

Add oil and chopped onion to a saucepan. Cook 'till softened. Add 300g arborio rice, coat in the oil. Add 200g porcini & 100ml white wine. Stir . A little at a time, add 1l stock, stirring constantly. Cook for 30mins. Grate in 50g smoked ricotta & add a knob of butter.

baking in the oven.

R O A S T

baked apples with amaretti & candied peel.

Beat 50g brown sugar with 50g butter. Add 40g crumbled amaretti & 25g mixed peel. Core the apples & stuff with sweet filling. Bake in a 180 degree oven for 45 mins.
