Tea has always been my favourite drink, my relaxing break in the afternoon, a soothing habit. Baking a cake is my therapy, a magic ritual. A tea infused cake for the afternoon tea is a powerful spell which will wash your thoughts away.

BAKE A PASTA MARGHERITA
Pasta Margherita is a gluten free cake. It's a hundred year old recipe from Pellegrino Artusi. The cake is made with eggs, potato starch, sugar and lemon juice.
STEW RHUBARB AND APPLES WITH TEA AND SUGAR
When the cake is cold, fill it up with the stewed rhubarb and apples, then ice with a lemon and tea infused glaze.
